Maple Whiskey Duck (or Goose) Bites

Done in only a few minutes, this is the perfect quick and easy weeknight meal. You can serve these duck or goose bites with any of your favorite sides, but I’m partial to some creamy mashed potatoes and roasted or steamed vegetables when I make them. If using goose, which is how I usually make this, try to make sure you use a younger one as those ultra-mature honkers can get quite tough. Also, make sure you don’t overcook the bites as they can become unpalatable if cooked past medium doneness.

If you’d rather not use alcohol in this recipe, you could replace the whiskey with fresh apple cider, chicken stock, or 2 tablespoons of cider vinegar. Flaky sea salt sprinkled over the finished dish is a nice touch, but not necessary. 

Ingredients

  • 2 boneless, skinless goose breasts, or 4 duck breasts
  • Kosher salt 
  • Freshly cracked black pepper
  • 1 Tablespoon vegetable oil
  • 1/8 cup maple syrup
  • 1/8 cup whiskey
  • Flaky sea salt (optional)

Instructions

  1. Cut the breasts into bite-sized cubes and toss in a generous sprinkling of salt and pepper.
  2. Add the oil to a cast iron pan or skillet over high heat. 
  3. Add the cubed meat and sear for 1 minute without moving them. Toss them around and cook for another 1 minute. 
  4. Add the maple syrup and whiskey and reduce heat to medium-high. Cook, stirring often, reducing the liquid until there is nothing more than a shiny glaze on the meat, about 2 minutes. 
  5. Serve with mashed potatoes and steamed or roasted vegetables. Garnish the goose bites with flaky salt. Enjoy!
